What's the best way to get back into a 401K plan when your company does not currently offer one?

Ben, unless your company plans to introduce a 401k, you cannot get back into one. The good news is that in many cases you can have an IRA or Roth IRA, and therefore still continue to save for retirement on a tax-advantaged basis. You can also roll a previous 401k into an IRA in order to increase your investment opportunities and simplify management of your financial life. Before doing so, however, you should ensure that your state offers IRA accounts the same legal protections as a 401k.
