I have a profit sharing account. How soon after employment ends am i entitled to that money?

It depends on your employer. If they have a vesting schedule and if you are fully-vested. But in general, as soon as you are no longer an active employee in their system, you should be able to move the money. The company you work for's HR department should be able to shed some light on this for you.
